The meat loaf was so moist didn't fall apart when I took it out of the pan and the best part was that my husband raved about it! This is a meat loaf recipe i'll make again and again. Within the pages of my cookbook, I proposed that people's perception of meatloaf became permanently skewed when a certain disheveled rock singer burst on the scene back in the seventies…but after much consideration, I've decided that it's actually the word "loaf" that has contributed the most to meatloaf being such a maligned food.

This is usually because there is too much liquid or add-ins (veggies, etc.) in the recipe and not enough binder (eggs act like glue). It's a tricky balance, because you want a soft, tender loaf, not a tough dry one. Why did my meatloaf fall apart?
Steps to make My meatloaf:
- Preheat oven to 350°. Mix first 9 ingredients together and form into meatball shape. Spray a meatloaf pan with cooking spray and place the meatloaf in the pan. Bake for 20 minutes. While baking, mix the glaze together. Pull out of oven and drain excess fat off. Now coat the meatloaf with the glaze and bake for 10 minutes. Take out of oven and let sit for 5 minutes before serving.
- I make instant mashed potatoes and after the meatloaf cooks for 20 minutes put the mashed potatoes on top of the meatloaf instead of glaze. Cook for ten minutes. When you slice your meatloaf, the potatoes are on it as well. You can serve glaze on the side if desired.
Most likely the culprit behind a crumbly meatloaf is not enough of a binder. The ingredients used to bind the meat together are some sort of bread (crackers, breadcrumbs, etc.) and eggs. If you use too much liquid, this could also cause the meatloaf to become too moist, and again fall apart. This was my second attempt at making meatloaf and it was a success!! I think the only thing i did different was that i grated the onion bell pepper and celery.
